Roonz’s Famous Ginger Cookies


Ginger Cookies
It’s a well know fact that Finn’s Aunty Roonz is the greatest baker we know. No matter what sort of get together we’re having she’ll always be there with something sweet and delicious. One of our favorite creations are her Ginger Cookies, tasty and soft throughout. Roonz aka Erin let me share this awesome recipe with the internet so here it is.

Auntie Roonz’s Famous Ginger Cookies:

1 cup butter
1 cup sugar
1 egg
1/4 cup molasses
2-1/4 cups flour
2 tsp soda
1/2 tsp salt
2 tsp cinnamon ( I use Vietnamese cinnamon from Penzey’s –its a little spicier)
2 tsp ginger

Cream butter and sugar. Add molasses and egg. Stir in flour sifted with soda, salt and spices. Refrigerate 1 hour or until you can roll into 1 inch balls. Roll in sugar. Smash down with a cup dipped in sugar. Bake at 350 degrees for 8-10 minutes. Makes 4 dozen. Do not overcook or your cookies will get hard, boo.
