One of my best Gal Pals, Valeria, a.k.a. Bill, a.k.a. Billaria, a.k.a. V, a.k.a. Billaria deBusha, a.k.a. Valeria the Dutchess of Valeriaville, is getting ready to welcome her first ever baby into this world. This first ever baby will be a girl baby so I felt inclined to whip up some pink cupcakes for the baby shower this past Saturday.

Now. I have yet to perfect my own recipe for delicious cupcakes so for these cupcakes I will rely on the recipe of one experienced actress/comidian. Amy Sedaris has yet to let me down in the cupcake recipe department so next time you need some cupcakes, do this:

1 1/2 sticks unsalted butter
1 1/2 cups sugar
2 eggs
2 teaspoons pure vanilla extract
2 1/2 teaspoons baking powder
1/4 teaspoon salt
2 1/2 cups flour
1 1/4 cups milk

Mix all that shit up and bake it in an oven that has been pre heated to 375° for 20 minutos, or until those cakes are perfectly golden brown. Amy says you could get 24 cupcakes outta this, I got 23. Weird..

We all know that we can’t make cupcakes and not frost them. So my dilemma with this frosting situation is this: Most buttercream frosting recipes that I have been in contact with call for the usage of an egg or two. Yeah, a raw egg. Once it is all mixed in there with the sugar and the milk, you don’t know it is there. But you know who might notice it? A tiny little baby that is still cookin’ inside her Mum’s tum, that’s who. So since you can’t give your pregg lady friend raw egg frosting, I listened to our old Friend, Amy S., and did this:

1 box confectioners’ sugar
1 stick unsalted butter
1 teaspoon pure vanilla extract
1/4 cup milk or light cream

Whip this stuff up good and plop it on your cupcakes.

Be warned, this is some sweet sweet frosting. Really, it seriously is. It’s good though!.

For a pop of color I added some orange nonpareils which I thought to be an unexpected contrast to the pink frosting. Fun, right!? I used these sparingly as I didn’t want to add too much more sweetness.

Ok now, this little lady should be hatching this April. I’ll keep you posted once she is here. I know I can’t wait to meet her!

    These look awesome Colz. Too bad your baking supplies didn't show up in time. I guess there's always the next party.
